Job Title: General Manager - Bar and Rooftop Cinema



Location: Peckham - Bussey Rooftop Bar & Rooftop Film Club



Reports To: Managing Director



Salary: 45,000-50,000 per annum



Brief



We are seeking an experienced and dynamic General Manager to lead the operations of our rooftop bar and cinema experiences in Peckham.



You will be based in South London, managing on-site at our Peckham venue.


Essentials

: The ideal candidate will have a passion for hospitality with proven experience as a General Manager or similar leadership role in a high-volume hospitality environment combining a keen understanding of spirits and cocktail costings, cellar management, stock control, rota building, and labour management.



We are looking for exceptional leadership and customer service skills, along with the ability and experience to efficiently oversee multiple aspects of the venue including, but not limited to, the additional management of a rooftop cinema experience and oversight of a third-party food offering.



The ideal candidate will have knowledge of health and safety regulations and best practices in the hospitality industry.



BIIAB Level 2 Personal Licence holder



Preferred

: Experience or interest in cinema, understanding or experience using cashless and remote ordering EPOS systems, ability to work to deadlines and meet monthly KPIs.







Responsibilities



1. Venue Management


Oversee day-to-day operations of the rooftop bar and cinema, ensuring smooth and efficient service delivery. Maintain high standards of customer service, ambience, organisation and cleanliness throughout the venue. Implement and enforce health and safety protocols to ensure a safe environment for staff and customers. Responsible for the successful day-to-day management of 2 outdoor cinema screens, one in Peckham and one in Stratford.

2. Staff Management


Recruitment, training, and supervision of a team of bartenders, floor staff, and support staff for the bar and cinema. Liaise with venue security attendants to ensure a safe and welcoming work environment for staff and customers alike. Review staffing performance regularly to promote staff welfare and ensure best practice within the venue and provide ongoing coaching and performance feedback to ensure staff are motivated. Develop fair and efficient staffing rotas to manage labour costs effectively.

3. Beverage Management


Implementation and ongoing development of an innovative and diverse cocktail menu in line with current trends and customer preferences. Ensure consistency and quality in cocktail preparation and presentation. Manage inventory, ordering, and stock rotation whilst paying close to attention to GPs to minimise waste and maximise profitability.




4. Third-Party Food Vendor Oversight


Coordinate with the third-party food vendor to ensure seamless integration of the offering with the bar operations. Monitor quality control, customer satisfaction, and compliance with contractual agreements and address any issues or concerns related to the food offering promptly and effectively by liaising with the food offering manager.




5. Cinema Operations Management


Effectively manage the cinema offering; Hire AGM to manage responsibilities including working with pre-arranged film scheduling, ticket sales oversight, guest ingress and egress and overall customer experience. Oversee cinema staff to ensure alignment with the bar's overall branding and customer service standards. Manage cinema concessions offering (popcorn, snacks etc) specifically including effective stock control, presentation and overall service efficiency. Assist in the implementation of promotional strategies to drive attendance and revenue for cinema events by working with Ownership/Director/Area Management.

6. Financial Management


Work towards labour cost budget targets and staffing forecasts. Daily EOD reports to Ownership/Director/Area Management on the financial performance of the venue. Understand and report on weekly income/expenditure to maintain profitability and enhance cost control. Weekly monitoring of revenue streams, expenses, and key performance indicators. Identify opportunities for revenue growth and cost savings initiatives.
