Job Title: Assistant Catering Manager

Reports to: Catering Manager

Direct Reports: Permanent Catering Staff, Casual Catering Stewards.

Salary: 28,000 per annum

Purpose of the role

To support the day to day operation within the Shuttleworth Runway Cafe

Responsible for the core management of the FOH function, building a well organised, confident team of FOH assistants reporting directly to the Catering Manager,

Responsible for food ordering, monthly stocktakes and ensuring all aspects of food safety are followed and enforced.

The Runway Cafe is open daily to the public and you will be responsible for creating a welcoming environment for new and returning customers as well as building positive relationships with the sites large base of staff and volunteers.

Shuttleworth is also home to a number of large public events and air shows welcoming circa 5000 visitors onto site per show and you will play a key part in the smooth operation of catering on these large scale events.

Job Functions

Management

Leading and supervising the team on shift to ensure quality and standards of catering operations including food/drink service, cleanliness of restaurant and catering outlets. Responsible for the ordering of stock on a daily basis and ensuring wastage targets are met by not over ordering. Maintain the health & safety and food safety of the catering outlets, ensuring that all relevant risk assessments are completed, maintenance checks are undertaken, and all records are stored correctly, as well as ensuring all FOH staff are trained to the required standard. To supervise the recruitment and training of temporary casual support as required by the catering manager
Planning & Operational

Plan the day to day FOH operation in the restaurant, refuelling station bar & catering pods ensuring each member of the team is set up and ready to deliver for visitors. To undertake and progress new and relevant projects within the department as directed by the catering manager To control stock levels and purchasing in line with set budgets To ensure smooth set up of lunches provided to onsite meetings and group bookings.
Financial

To handle cash and PDQ payments and have a good working knowledge of EPOS till systems. To complete end of day cashing up procedures, ensuring tills balance at the end of the day and putting in controls to manage this.
Administration

Maintain staff training records & facilitate renewal of training in accordance to food safety regulations. Provide back office support with the EPOS system to ensure information is updated accurately,
Maintained efficiently and operates to its full potential

Undertake general administration to maintain the catering outlets and their equipment Assisting with processing timesheets for payroll
Customer Service

Provide high quality and efficient service to customers Handle complaints and feedback as required Build and maintain the team's standards through leading by example
Relationships

To ensure smooth relationships with internal and external teams and clients To represent the Shuttleworth Trust with stakeholders and customers To build positive rapport with the large base of volunteers that work across the site
Budgets and Resources

Reduce operational costs and maximize resources while maintaining standards of products and services To have in depth knowledge of the stock and ensure all orders replenish out of stocks in a short period of time
Policies and Procedures

Comply with Health and Safety legislation, to include COSHH Comply with GDPR legislation Adhere to organisational policies Develop and maintain policies and procedures that support and deliver departmental objectives

Maintain professional levels of confidentiality commensurate with the role
Hours and Physical Conditions

28,000 Full time, 40 hours p/wk over 5 days additional hours required during peak season May - September. This role will require a large amount of weekend working.
